Requirements

  • Good communication skills in English & Bahasa Malaysia 
  • Diploma or Degree in Culinary Arts, Food Production, or Hospitality Management.
  • Minimum 3–5 years experience in managing central kitchen or large-scale food production.
  • Strong knowledge of food safety, production planning, and kitchen operations.
  • Proficient in MS Office and kitchen inventory systems.
  • Leadership, problem-solving, and organizational skills.
  • Able to work flexible hours and under pressure.

Responsibilities

Operation Oversight

  • Plan, coordinate, and supervise daily kitchen operations and production schedules.
  • Ensure food preparation is done in accordance with standardized recipes and portioning.
  • Oversee timely dispatch of food and items to outlets based on their daily requirements

 

Inventory & Procurement

  • Monitor inventory levels, usage trends, and forecast needs accurately.
  • Coordinate with purchasing team for timely procurement of raw materials.
  • Conduct regular stock checks and control wastage and pilferage.

 

Food Safety & Hygiene 

  • Enforce compliance with HACCP, food safety regulations, and internal SOPs.
  • Ensure cleanliness and sanitation of kitchen equipment, utensils, and facilities.
  • Lead internal hygiene audits and corrective actions.

 

Team Management

  • Lead, train, and evaluate kitchen staff, including production crews and supervisors.
  • Develop work schedules and ensure adequate manpower during peak times.
  • Promote a productive and positive work environment..

 

Administrative & Coordination

  • Maintain accurate production records, logs, and inventory reports.
  • Work closely with outlet managers to understand product feedback and improve quality.
  • Report operational performance, challenges, and solutions to upper management

 

Cost Control & Efficiency

  • Monitor food cost, labor cost, and production efficiency.
  • Recommend process improvements to reduce waste and increase productivity.
  • Analyze kitchen KPIs and implement data-driven operational enhancements.
