Responsibilities

Job Summary:

Looking for a talented Chef De Partie - Pastry to assist in the daily operations and deliver high-quality desserts and baked goods while maintaining food safety, cost control, and consistent quality standards.


Main Duties & Responsibilities

  • Prepare and produce a variety of pastries, desserts, cakes, breads and bakery products according to established recipes and standards.
  • Ensure all pastry products are prepared with consistent quality, taste, texture and presentation.
  • Assist the Pastry Chef in planning and organising daily pastry production based on business levels and operational requirements.
  • Monitor the preparation, cooking, baking, finishing and presentation of pastry products.
  • Ensure proper mise en place is completed before service and production.
  • Maintain appropriate stock levels of pastry ingredients and inform the Pastry Chef of any shortages or quality concerns.
  • Ensure all ingredients are properly stored, labelled and rotated according to FIFO principles.
  • Maintain cleanliness and organisation of the Pastry Kitchen, equipment and workstations at all times.
  • Follow food safety, hygiene and sanitation standards in accordance with hotel policies and local regulations.
  • Ensure proper handling and storage of food products to minimise wastage and maintain food quality.
  • Assist with the preparation of buffet desserts, à la carte desserts, banquets, events and special functions.
  • Support the development and introduction of new pastry and dessert items when required.
  • Work closely with other kitchen sections to ensure smooth and efficient operations.
  • Monitor portion sizes and minimise food wastage while maintaining quality standards.
  • Assist in controlling food costs through proper usage, storage and handling of ingredients.
  • Ensure all kitchen equipment is used correctly and report any defects or maintenance requirements promptly.
  • Provide guidance and support to Commis Chefs and junior team members.
  • Assist in training and developing junior pastry team members when required.
  • Maintain a professional attitude and good teamwork within the kitchen.
  • Perform any other reasonable duties assigned by the Pastry Chef, Sous Chef or Executive Chef.


Qualifications


  • Culinary degree with a focus on pastry or equivalent experience.
  • 4+ years in pastry roles.
  • Pastry skills, creativity, attention to detail.
  • The position is open to local and permanent residents only.
