REQUIREMENTS

  • Diploma/Degree in Food Science, Food Technology, Chemical Engineering, Process Engineering, Chemistry, Biotechnology or related field.
  • Experience in R&D, liquid product development, food/beverage manufacturing or production process is preferred.
  • Experience with liquid product formulation and production scale-up will be an advantage.
  • Basic understanding of pump, valve, pipeline, mixing and filling systems.
  • Familiar with basic product testing such as Brix, pH and viscosity.
  • Strong troubleshooting and problem-solving skills.
  • Able to work hands-on at the production floor and laboratory.
  • Able to work closely with Production and technical teams.
  • Good documentation and analytical skills.

Responsibilities

JOB SUMMARY

Responsible for the development, improvement and commercialisation of liquid food and beverage products, with strong involvement in production process, production pipeline, equipment operation, scale-up and troubleshooting. The role works closely with R&D, Production, QA/QC, Engineering and Procurement teams to ensure products are successfully transferred from laboratory trials to consistent and efficient commercial production.

KEY RESPONSIBILITIES

  1. Product Development & Formulation
  • Develop and improve liquid food and beverage formulations according to company requirements.
  • Conduct laboratory trials, product testing and formulation optimisation.
  • Evaluate ingredients based on taste, functionality, stability, quality and cost.
  • Conduct sensory evaluation and product comparison.
  • Maintain accurate formulation and product development records.
  1. Production Trial & Scale-Up
  • Conduct production trials from laboratory scale to commercial production.
  • Convert and optimise formulations for larger production batches.
  • Monitor the effect of scale-up on taste, viscosity, Brix, pH, appearance and product consistency.
  • Work closely with Production Operators during trial runs.
  • Identify and resolve issues arising during scale-up.
  1. Production Pipeline & Process
  • Understand and monitor the liquid production flow from mixing tank → pump → valve → pipeline → holding tank → filling machine.
  • Evaluate production parameters including temperature, mixing time, flow rate, pressure and filling conditions.
  • Identify opportunities to improve production efficiency and minimise product loss.
  • Assist in establishing standard production parameters and process controls.
  1. Pump, Valve & Equipment Troubleshooting
  • Understand the basic operation and function of pumps, valves, pipelines, mixing tanks and filling systems.
  • Troubleshoot issues involving flow rate, pressure, leakage, blockage and inconsistent product transfer.
  • Work with Engineering/Maintenance teams to identify equipment-related issues.
  • Recommend suitable process or equipment improvements where required.
  1. CIP & Hygiene
  • Support and monitor the suitability of production processes for CIP (Clean-in-Place).
  • Identify potential product residue, blockage or contamination points within tanks, valves and pipelines.
  • Work with Production and QA/QC to improve cleaning and sanitation processes.
  1. Quality & Product Consistency
  • Monitor critical product parameters such as:
  • Brix
  • pH
  • Viscosity
  • Temperature
  • Appearance
  • Taste
  • Product yield
  • Investigate product deviations and batch-to-batch inconsistencies.
  • Conduct root cause analysis and recommend corrective actions.
  • Ensure products meet approved specifications.
  1. Shelf-Life & Stability
  • Conduct and monitor shelf-life and stability testing.
  • Evaluate changes in taste, colour, odour, viscosity, separation and other product characteristics.
  • Recommend formulation or process adjustments based on stability results.
  1. Costing & Yield Improvement
  • Prepare basic formulation and product costing calculations.
  • Monitor raw material usage, production yield and wastage.
  • Identify opportunities to reduce production cost and product loss without compromising quality.
  • Work with Procurement to evaluate alternative ingredients or suppliers.
  1. SOP & Documentation
  • Prepare and maintain:
  • Product Formulation
  • Product Specification
  • Batch Sheet
  • Production Trial Report
  • SOP
  • Work Instruction
  • Stability Test Report
  • Ensure all formulation and process changes are properly documented and communicated to relevant departments.
  1. Cross-Functional Collaboration
  • Work closely with Production, QA/QC, Engineering, Procurement and Operations.
  • Provide technical support to Production when product or process issues occur.
  • Assist in training Production Operators on new products, processes and SOPs.
  • Participate in production improvement and new product implementation projects.
