The Assistant Chef de Partie Pastry works under the guidance of the Chef de Partie to oversee an assigned pastry section with minimal supervision while maintaining quality, cleanliness and production standards.

Work aboard an American all-inclusive ultra-luxury cruise line following destination-rich global itineraries that visit renowned cities, culturally significant ports and smaller coastal destinations. Build valuable international pastry experience while travelling across multiple continents.

Important: Cruise ship grading differs from land-based hotel grading. Depending on relevant experience and the client’s assessment, candidates may be considered for a position one or two ranks below their current land-based role.

• Minimum 5 years of professional pastry experience in a 4-star or 5-star hotel, luxury hospitality establishment or upscale cruise line.

• Strong pastry-production and knife-handling skills.

• Able to prepare creams, ice creams, basic doughs and other pastry components.

• Familiar with piping bags and general pastry-production techniques.

• Pastry School degree, Food Hygiene certification or an equivalent combination of education and experience.

• Cruise ship experience is preferred but not compulsory.

• Fluent in written and spoken English.

• Strong communication, leadership, administrative and team-coaching skills.

• Cost-conscious and quality-focused, with the ability to work under pressure.

• Able to follow scheduled working hours and collaborate with an international team.

• Knowledge of Microsoft Outlook, Word, Excel and PowerPoint.

• Familiarity with database-driven inventory-control systems.

• Must be able to lift or move up to 25 kilograms without assistance.

Salary

• Salary: USD 1,700

• Contract duration: 6 months

• Work under the guidance of the Chef de Partie to manage an assigned pastry section.

• Prepare pastry items according to approved menus, recipes, preparation methods and instructions.

• Produce creams, ice creams, basic doughs and other required pastry components.

• Use piping bags and other pastry techniques to complete assigned products.

• Work across different pastry sections according to operational requirements.

• Maintain consistent food quality, preparation and presentation standards.

• Demonstrate pastry methods and recipes to junior team members.

• Maintain immaculate cleanliness throughout the pastry department and adjacent areas.

• Enforce food-hygiene, HACCP and applicable public-health regulations.

• Prepare the pastry section for announced and unannounced inspections.

• Control, clean, sanitise and properly store pastry equipment.

• Prevent equipment damage or loss and report malfunctions when identified.

• Use supplies, equipment and production records responsibly to support cost control.

• Assist with food-storage operations and quality control when required.

• Attend required meetings, training sessions and inspections.

• Follow all shipboard safety procedures and participate in mandatory training and safety drills.
