Responsibilities
Examine Point-of-Sale (POS) and Customer Relationship Management (CRM) data across all outlets to uncover sales patterns, guest preferences, and untapped revenue opportunities.
Formulate pricing recommendations for food and beverage offerings, factoring in demand fluctuations, seasonality, and competitor positioning.
Track revenue performance indicators and deliver regular reports to management.
Plan, organise, and execute events for corporate clients, from initial consultation to post-event follow-up.
Coordinate with internal teams (culinary, marketing, operations) to ensure high-quality event delivery aligned with brand standards.
Liaise with vendors and suppliers to secure required products, equipment, and services within budget and timelines.
Oversee event logistics including menus, layouts, staffing, and service flow.
Monitor budgets, negotiate contracts, and optimise event profitability.
Partner with culinary and bar teams to evaluate item performance using contribution margin and popularity metrics.
Recommend adjustments to menus, bundles, and promotions that strengthen overall revenue.
Assist in cost analysis to keep pricing aligned with food cost, beverage cost, and operational targets.
Oversee pricing and promotional activity on third-party delivery platforms and direct online ordering systems.
Evaluate channel performance to improve sales mix and margin contribution.
Contribute to the rollout of e-commerce and digital ordering initiatives.
