Full Time Head Chef Jobs, Salary up to MYR 6,500 in Kenmaki SDN BHD Federal Territory - Maukerja

Role summary

Lead kitchen operations at Kenmaki Aeon Midtown, responsible for menu execution, food quality, kitchen team management and cost control for our temaki (hand-roll) concept.

Key responsibilities

• Take full ownership of kitchen operations, output quality and consistency across all hand roll and side items
• Lead, train, schedule and appraise the kitchen team (Sous Chef, CDP, Demi Chef, Commis)
• Own food costing, portion control, wastage tracking and inventory management against budgeted targets
• Set and enforce food safety, hygiene and kitchen SOPs, including audits and corrective action
• Partner with management on menu development, seasonal specials and recipe standardisation
• Source, negotiate with and manage suppliers, and place and verify stock orders
• Plan kitchen staffing and prep schedules to match expected sales volume and peak periods
• Maintain kitchen equipment, coordinate servicing/repairs and ensure proper daily upkeep
• Track and report kitchen KPIs (food cost %, wastage %, speed of service) to management
• Troubleshoot quality or consistency issues and retrain staff where standards slip
• Ensure new menu items and promotions are executed correctly at launch

Requirements

• At least 3–5 years' kitchen experience, including 1–2 years in a head chef or kitchen leadership role
• Experience with Japanese cuisine, sushi or hand-roll preparation strongly preferred
• Strong leadership, training and team management skills
• Good understanding of food costing and inventory management
• Knowledge of food hygiene and safety standards; certification an advantage
• Able to work retail hours, including weekends and public holidays
