Commis I, II, III (Bakery & Pastry) (LRT Asia Jaya walk 5 minutes)
Job Summary
We are seeking an efficient, dedicated, and precision-driven Commis Baker to join our production team in Petaling Jaya. In this role, you will focus on the technical art of bulk flour scaling, dough fermentation, and high-temperature oven management. You will be responsible for executing our daily rotation of artisanal breads and laminated pastries, ensuring consistency in crust, volume, and crumb structure while maintaining smooth bakery operations.
Key Responsibilities
- Baking & Production: Prepare, shape, and bake high-volume bakery items—including Western artisanal selections (sourdough loaves, croissants, brioche, Danish pastries) and local Malaysian favorites (soft sweet buns, local sandwich loaves)—swiftly and consistently.
- Mise en Place & Fermentation: Manage daily station setups by accurately scaling ingredients using baker’s percentages. Monitor ambient temperature, humidity levels, and precise proofing/fermentation schedules before baking.
- Quality Control: Monitor structural dough development, oven steam levels, and baking temperatures to achieve perfect crust coloration and crumb texture.
- Hygiene & Safety: Maintain strict bakery cleanliness and follow deep-cleaning procedures for heavy machinery (spiral mixers, dough sheeters, and deck/rotary ovens), strictly upholding local food safety and MOH guidelines.
- Inventory Management: Monitor flour, yeast, butter blocks, and dry stock levels; manage rotation using the FIFO method to avoid ingredient spoilage.
- Team Collaboration: Share production workloads collaboratively within the bakery brigade, cross-supporting the pastry team during high-volume periods to ensure smooth overall operations.
Job Requirements & Qualifications
- Minimum Commitment: Must be available to work for a minimum of 3 months.
- Working Hours: Regular weekday shift from Monday to Friday (8:30 AM – 5:30 PM), with the flexibility to work Saturdays if needed.
- Education: A Certificate or Diploma in Baking Arts, Culinary Arts, or a related field is an advantage.
- Experience: Minimum of 1 year of hands-on experience in a commercial bakery, central production facility, or high-volume café. Fresh graduates with exceptional dough-handling skills are welcome.
- Health & Legal Compliance: Must possess a valid Typhoid Vaccination Card and an MOH Food Handler Certificate, or be ready to obtain them before the official start date.
- Technical Skills: Strong understanding of yeast behavior, flour gluten development, advanced dough shaping, lamination, and the ability to strictly follow technical recipe cards.
