About the Role
In this role, you will make sure every outlet gets the food, beverage and operating supplies it needs, at the right quality, price and time. You will manage suppliers, control purchasing costs and support our new restaurant openings.
Key Responsibilities
Sourcing and purchasing
Source food, beverage, packaging, smallwares and operating supplies for all outlets.
Raise purchase orders and check deliveries against them, and resolve any discrepancies with suppliers and outlets.
Find and evaluate new suppliers, including suppliers of imported and specialty ingredients for chef-led menus.
Work with chefs and bar teams on product specifications, samples and tastings for new menu items.
Supplier management and cost control
Negotiate prices, payment terms and annual or volume contracts.
Keep an up-to-date supplier list and price book, and review how suppliers perform on quality, price and delivery.
Track price changes and market trends, and suggest ways to save costs without lowering quality.
Support food and beverage cost targets together with the culinary and finance teams.
Inventory and systems
Support par levels, stock-takes and inventory reconciliation with outlet teams.
Keep procurement records accurate in the purchasing or inventory system.
Prepare monthly reports on spending, price variance and supplier performance.
Compliance
Make sure suppliers meet SFA food safety requirements and hold valid licences and certificates.
Follow the Group's approval limits and procurement policies.
New openings and projects
Support pre-opening procurement for new concepts, including kitchen equipment, smallwares, uniforms and opening stock.
Coordinate with the operations, culinary, design and finance teams on opening timelines and budgets.
Additional responsibilities for Senior Procurement Executive
Lead procurement for selected categories or concepts, and handle major supplier negotiations and tenders.
Run cost-saving projects and review procurement processes across the Group.
Guide and review the work of Procurement Executives and assistants.
Requirements
Procurement Executive
Diploma or degree in Supply Chain, Business, Hospitality or a related field.
1 to 4 years of experience in procurement or purchasing.
Familiar with food and beverage products and suppliers.
Able to handle day-to-day discussions on pricing and delivery.
Senior Procurement Executive
Degree in Supply Chain, Business, Hospitality or a related field.
At least 3 years of experience in procurement, including at least 2 years in F&B or hospitality.
A strong network of F&B suppliers in Singapore and the region.
Experience leading contract, tender and annual pricing negotiations.
Has led procurement for at least one restaurant opening.
Both levels
Comfortable using Excel and procurement or inventory systems.
Organised and detail-oriented, and able to handle the needs of several outlets at once.
A clear communicator who works well with chefs, outlet managers and the finance team.
Knowledge of SFA food safety requirements is an advantage.
Able to visit outlets and suppliers when needed.
