Job Summary

We are looking for a passionate and dedicated Assistant Sushi Chef to join our Japanese fine dining restaurant. The successful candidate will support the Head Chef and Sushi Chef in daily food preparation, ensuring high standards of food quality, presentation, hygiene, and kitchen operations.

Responsibilities

• Sushi Preparation: Assist in preparing sushi, sashimi, nigiri, maki, and other Japanese dishes according to the restaurant's standards.

• Ingredient Preparation: Handle, clean, cut, and prepare fresh seafood and other ingredients while maintaining quality and freshness.

• Kitchen Operations: Support the Sushi Chef in daily kitchen operations, including mise en place, food preparation, and service.

• Quality Control: Ensure consistency in food quality, portioning, and presentation.

• Inventory Management: Assist in receiving deliveries, stock rotation, proper storage, and monitoring ingredient wastage.

• Hygiene & Safety: Maintain a clean and organised workstation and comply with food safety and hygiene regulations.

• Teamwork: Work closely with the kitchen team to ensure smooth and efficient service.

Preferred competencies and qualifications

• Minimum 2 years of experience working in a Japanese fine dining restaurant
• Friendly, customer-focused attitude with strong communication and interpersonal skills
• Well-organized, reliable, and able to maintain cleanliness consistently
• Willingness to learn and adapt in a fast-paced work environment
• Availability to work a 6-day week including weekends and public holidays
