Job Description
Responsibilities
Prepare a wide variety of dosa, including plain dosa, masala dosa, ghee dosa, onion dosa, rava dosa, podi dosa and other speciality dosa varieties.
Prepare authentic South Indian prata and parotta varieties, including plain prata, egg prata, onion prata, coin prata, kothu prata and veechu parotta.
Prepare chapati, poori, uttapam, appam and other South Indian tiffin items along with South Indian Curries.
Prepare and maintain dosa and idli batters, including grinding, fermentation and consistency control.
Prepare traditional accompaniments such as sambar, chutneys, kurma and suitable gravies.
Ensure consistent taste, texture, presentation and portion sizes.
Develop and prepare speciality tiffin items based on restaurant requirements.
