Front Desk Agent (5,5 months): You will learn front desk computer system; check-in and check-out procedures; promote Preferred Guest Program; cashier responsibilities; maintain a house bank and make a deposit and accurate report of receipts daily; group arrivals procedures, guest room assignment and control; walk over procedures; hourly house counts; sell-out controls; room key controls; room up selling techniques; resolve guest concerns.
Front Desk Supervisor (3 months): You will learn to oversee the daily operations of the team; ensures all Team Members are adhering to the company standards. Learn to manage the interactions with the guest and handles all guest requests. Provides four diamonds experience by focusing on exceeding guest expectations. Supports the team by providing constant feedback and training. Understands the needs and wants of the customers in our market, improves processes by listening to the team and customers. Reviews occupancy flow patterns throughout the evening as well as Guest Services logs and applicable computer reports to ensure proper department coverage and an outstanding level of service.

Banquets Demi Chef (3,5 months): You will learn traditional and contemporary American banquet menus with an emphasis on quality, quantity, setup, timing, service; learn to scale recipes for large volume production; learn to organize preparation, storage, and delivery of volume production; learn preparation of contemporary American banquets, classical cuisine banquets, hot and cold buffet stations, special events and various styles of service; learn to set up station with predetermined mise en place required to service all banquet functions; assist in the preparation of banquet event food items using predetermined methods in a timely and consistent manner.
Restaurant Demi Chef (6 months): You will learn traditional and contemporary restaurant menus with an emphasis on quality, quantity, setup, timing, service; organizing the preparation, storage, and delivery of small volume production for a la carte service; set up and maintenance of department to ensure that it is up to standard; learn to set up station with predetermined mise en place required to service restaurant operations; learn preparation of all restaurant food items using predetermined methods in a timely and consistent manner; observe and practice food production practices that meet federal and state regulations.

Host (1,5 months): You will learn responsibilities of the restaurant host as they will gain a deep understanding of the restaurant business levels, managing the flow the restaurant guests. The participant will have to learn how and where to seat guests, in accordance with business flow, to set the serving team up for success. Additional skills that will be learnt include phone etiquette and managing the restaurant reservation system.
Server (5 months): You will begin this phase by learning the restaurant’s service standards, menu knowledge, and point-of-sale system. Initial training will focus on understanding proper service sequence, table setup, and effective guest interaction techniques. As training progresses, increasing responsibility will be taken on for managing a section, including greeting guests, taking orders, delivering food and beverages, and ensuring overall guest satisfaction. Skills will be developed in upselling, course timing, and coordination with kitchen and bar teams to support efficient service flow. Additional exposure will include handling guest inquiries, supporting basic service recovery, and maintaining service standards during high-volume periods. By the end of the rotation, confidence in full-service execution, strong communication skills, and the ability to contribute to a consistent, high-quality dining experience will be demonstrated.

Garde Manger Demi Chef (3,5 months): You will learn to prepare and coordinate the production of cold food items to maintain high standards of quality; learn American contemporary styles of presenting food and preparation of buffets; learn to prepare all cold food items for buffet, banquet, and restaurant use according to standard recipes, visually inspect the appearance of all cold food for proper color combination and overall presentation to maintain appeal; prepare requisitions for supplies and food items for production in work stations; check and control proper storage of all food items in refrigerators and freezers to maintain product freshness.
Hotline/Pasta Demi Chef (6 months): You will learn the responsibilities of working the Hotline, Pasta, and Antipasti stations while gaining an understanding of kitchen coordination and high-volume service execution. The participant will learn the process of preparing hand-made dough for various pastas such as penne, cavatelli, rigatoni, linguine, agnolotti, pizza, and spaghetti, as well as preparing seasonal fillings and sauces using fresh ingredients. Training will also include the preparation and presentation of traditional antipasti, including cured meats, cheeses, marinated vegetables, salads, and other cold and hot appetizers, with an emphasis on flavor balance, presentation, and proper portioning. The participant will apply cooking techniques such as boiling, baking, sautéing, roasting, grilling, braising, and poaching while maintaining quality and consistency during service. Additional skills to be learned include advanced knife skills, station setup and organization, simultaneous preparation of vegetables, starches, proteins, and appetizers, plating and presentation standards, requisitioning supplies, and proper storage and handling of food items to maintain freshness and food safety standards.
