Diploma / Certificate in Culinary Arts or related field with 3–5 years of kitchen experience, including 1–2 years in a supervisory role.
Strong understanding of daily kitchen operations, food preparation standards, and service execution.
Good knowledge of food safety, hygiene standards, and SOP compliance.
Experience in stock monitoring, FIFO practices, and supporting food cost control.
Ability to supervise shifts, guide team members, and act as Person-in-Charge (PIC) when required.
Tanggungjawab
Kitchen Operations Management – Oversee daily food preparation, production flow, and service execution while ensuring dishes meet standard recipes, portioning, and presentation guidelines.
Quality & Hygiene Control – Ensure compliance with food safety, hygiene standards, and SOPs, conduct daily checks on freshness and temperature, and supervise cleaning routines.
Team Leadership & Training – Supervise kitchen staff, provide on-the-job training, performance feedback, and support onboarding and skill development initiatives.
Inventory & Cost Management – Monitor stock usage, control wastage, assist with stock counts, and support accurate requisition and raw material management to meet food cost targets.
Communication & Coordination – Coordinate with service, purchasing, and logistics teams, support kitchen briefings, and act as the person in charge when the Kitchen Head is absent.
