Job Summary
Assist in managing the pastry kitchen operations, ensuring high-quality desserts, pastries, and baked goods are prepared and presented according to hotel standards. Support the Pastry Chef in supervising the team, maintaining hygiene, and ensuring smooth daily operations.
Key Responsibilities
1. Food Preparation & Quality Control
- Prepare and present pastries, desserts, cakes, and bakery items according to recipes and hotel standards
- Ensure consistency in taste, texture, and presentation
- Assist in menu planning and new dessert development
- Monitor portion control and minimize wastage
2. Kitchen Operations
- Assist in supervising daily pastry kitchen operations
- Ensure mise en place is completed on time
- Coordinate with other kitchen sections for smooth service
- Step in during peak periods to support production
3. Team Supervision
- Guide and train commis, and trainees
- Ensure team follows SOPs and kitchen standards
- Assist in scheduling and task delegation
4. Hygiene & Safety
- Ensure compliance with food safety standards (HACCP, hotel policies)
- Maintain cleanliness of workstations and equipment
- Ensure proper food storage and labeling
5. Inventory & Cost Control
- Assist in stock control and ordering ingredients
- Monitor usage to reduce waste and control cost
- Conduct regular inventory checks
Requirements
- Good knowledge of baking techniques and dessert presentation
- Basic supervisory skills
- Knowledge of food safety standards (HACCP)
- Able to work shifts, weekends, and public holidays
Pay: RM3,400.00 - RM4,100.00 per month
