Role Overview
A Kitchen Crew Intern works alongside culinary professionals to learn the foundational operations of a commercial kitchen. This role is designed to provide hands-on experience in basic food preparation, kitchen hygiene, station setup, and high-volume food service, serving as a stepping stone toward a career in the culinary arts or hospitality industry.
Core Responsibilities & Duties1. Food Preparation (Mise en Place)
- Ingredient Prep: Wash, peel, chop, slice, and portion vegetables, meats, and seafood according to standardized restaurant recipes and sizing guidelines.
- Stocking Stations: Ensure that line stations are fully stocked with necessary ingredients, sauces, garnishes, and utensils before peak dining hours.
- Weighing & Measuring: Accurately weigh and measure ingredients for recipes, marinades, dressings, and basic doughs or batters.
2. Kitchen Operations & Cooking Support
- Basic Cooking: Assist in basic cooking tasks such as frying, grilling, boiling, blanching, or roasting under the direct supervision of the Chef de Partie or Sous Chef.
- Plating & Garnishing: Assist in assembling dishes, ensuring consistent presentation and correct portion sizes before they leave the kitchen.
- Order Coordination: Communicate effectively with front-of-house staff and fellow kitchen crew to ensure timely execution of food orders during rush periods.
3. Food Safety & Sanitation
- Hygiene Compliance: Strictly adhere to First-In, First-Out (FIFO) inventory rotation rules to minimize food waste and spoilage.
- Temperature Monitoring: Assist in checking and logging refrigeration, freezer, and internal cooking temperatures to maintain food safety standards.
- Labeling & Dating: Properly store, date-label, and cover all prepared food items in walk-in coolers and dry storage areas.
4. Cleaning & Maintenance
- Station Cleanliness: Maintain a clean, organized, and sanitized workstation throughout the shift, complying with standard occupational safety and health regulations.
- Equipment Care: Clean and sanitize kitchen machinery, prep tables, cutting boards, and cooking utensils after use.
- Closing Duties: Assist with end-of-day cleaning tasks, including scrubbing floors, wiping down stainless steel surfaces, disposing of trash and grease, and properly shutting down equipment.
Pay: RM300.00 - RM800.00 per month
