Role purpose
Own the bar as a craft program and a business: what's in the glass, the team behind it, the numbers underneath, and the Distillius partnership. You set the standard, then make sure it holds on a busy Friday without you watching.
Operations and standards
Run consistent, high-quality bar service
Set drink specs, build sheets, and SOPs so quality holds when you're off the floor
Lead from the floor at peak service
Keep the bar and front-of-house in sync
Team leadership
Roster, train, and develop the bartending team
Hire with the Directors, set probation goals, run honest performance reviews
Build skill through drills, tastings, and feedback
Commercial and stock
Own bar P&L: pour cost, margins, pricing, wastage
Manage inventory, ordering, par levels, and stocktakes
Hit cost targets without cutting quality
Report performance with numbers, not vibes
Menu and Distillius
Develop and refresh the drinks list, including house creations
Integrate Distillius spirits intentionally, never forced
Main contact with Distillius: ordering, new releases, training
Run tastings so the team can speak to the range with confidence
Compliance and safety
Responsible serving, age verification, liquor licensing conditions
Hygiene, cleanliness, and workplace safety at the bar
What we're looking for
Solid bartending plus genuine management experience (ideally [3]+ years leading a bar team)
Comfortable with cost control, inventory, and reading a P&L
A real leader: calm under pressure, develops people, holds standards
Strong craft-spirit knowledge and real interest in the product
Awareness of Singapore liquor licensing and responsible-service obligations
