Chef De Partie (head of kitchen) is responsible for overseeing the overall kitchen operation, ensuring food quality, safety and consistency are maintained at all times.

KEY RESPONSIBILITIES

KITCHEN OPERATION

• Lead and supervise daily kitchen operation and ensuring good workflow and timely prepare
• Maintain high standards of food quality , taste. presentation and portion control.
• Ensure all food is prepared according to standard recipes and hotel guidelines.
• Ensure all equipment is functioning properly and report issues for maintenance.
• Monitor and maintain cleanliness, hygiene and sanitation following HACCP and food safety standard

STAFF MANAGEMENT

• Schedule, train, guide and monitor staff to improve performance and productivity.
• Conduct daily briefings, assign duties and ensure clear communication among team members.
• Maintain staff discipline and work ethics according to hotel policy.

MENU & FOOD PRODUCTION

• Assist in menu creation, development of new dishes and seasonal promotions.
• Monitor food production levels to avoid shortages or wastage.
• Ensure proper portion and tasting for quality control

INVENTORY & COST CONTROL

• Monitor stock levels and ensure timely requisitions for ingredients are strictly followed.
• Maintain accurate inventory records and reduce wastage through proper planning.
• Control food cost and the usage of ingredients.

COMPLIANCE & DOCUMENTATION

• Ensure all SOP, hygiene practices and safety procedures are followed.
• Maintain necessary records
• Ensure kitchen meet HACCP, Sijil Halal requirement and local health regulations.

Pay: RM3,200.00 - RM3,500.00 per month
