F&B Executive

The F&B Executive is responsible for overseeing the daily operations of all F&B outlets to ensure excellent guest service, efficient operations, and achievement of departmental revenue and profitability targets. The role involves supervising staff, maintaining quality standards, ensuring compliance with hygiene and safety regulations, and supporting banquet and event operations.

Key Responsibilities

1. Operations Management

· Supervise the daily operations of the restaurant, café, banquet, room service, and other F&B outlets

· Ensure smooth opening & closing procedures of all outlets

· Monitor F&B quality, presentation, and service standards

· Ensure all outlets are clean, organized, and well maintained

· Resolve operational issues promptly to minimize guest inconvenience

2. Guest Service

· Ensure all guests receive professional, friendly, and efficient service

· Handle guest complaints and service recovery professionally

· Build strong guest relationships to encourage repeat business

· Monitor guest feedback and implement improvement plans

3. Staff Supervision

· Supervise and coordinate the work of F&B service staff

· Prepare staff duty rosters according to business levels

· Conduct daily briefings before each shift

· Coach, train, and develop team members on service standards and product knowledge

· Monitor staff grooming, punctuality, discipline, and attendance

4. Banquet & Event Operations

· Coordinate banquet functions according to the Event Order

· Ensure proper setup of function rooms before events

· Supervise banquet staff during events

· Coordinate closely with the kitchen and sales teams to ensure smooth execution

· Monitor event timeliness and guest satisfaction throughout the function

5. Sales & Revenue

· Support initiatives to increase F&B sales and revenue

· Promote ongoing promotions, seasonal menus, and special events

· Monitor daily sales performance against targets

· Encourage upselling and suggestive selling among service staff

6. Cost Control

· Monitor operating expenses to minimize wastage

· Ensure proper portion control and service procedures

· Control breakages, losses, and inventory usage

· Assist in monthly stock takes and inventory reconciliation

· Ensure all equipment is used properly to reduce maintenance costs

7. Hygiene & Safety

· Ensure compliance with food safety, HACCP, and hygiene standards

· Maintain cleanliness of dining areas, bars service stations, and storage areas

· Ensure staff comply with grooming and personal hygiene standards

· Monitor workplace safety and report hazards immediately

8. Administration

· Prepare daily operational reports

· Monitor attendance records & overtime

· Maintain outlet checklists and service records

· Ensure accurate cash handling procedures are followed where applicable

· Assist in preparing budgets and monthly performance reports

9. Coordination

· Work closely with the Kitchen, Front Office, Housekeeping, Sales & Marketing, Engineering, and Finance departments

· Ensure effective communication between departments to deliver seamless guest experiences

· Attend departmental meetings and operational briefings
