We are looking for a hands-on R&D Executive to support the development and improvement of chocolate and confectionery products from laboratory formulation to commercial production.
The role covers new product development, customer sample preparation, formulation management, product costing, production scale-up, and technical troubleshooting.
Candidates with 2–3 years of R&D / Product Development experience in chocolate, confectionery, spreads, fillings, bakery ingredients, sauces, glazes, or related food manufacturing industries are highly encouraged to apply.
Key Responsibilities
1. Product Development & Formulation
- Develop and improve chocolate spreads, sauces, fillings, creams, coatings, glazes, nut-based products, and related confectionery applications.
- Conduct laboratory trials and optimise taste, texture, colour, viscosity, stability, and overall product performance.
- Develop formulations based on customer requirements, market opportunities, raw material availability, and commercial considerations.
- Improve existing products for quality, stability, processing efficiency, and cost effectiveness.
2. Customer Samples & R&D Projects
- Prepare customer samples accurately and within required timelines.
- Work closely with Sales and Marketing to understand customer requirements and revise formulations based on feedback.
- Maintain proper records of sample requests, formulations, trial results, revisions, and customer feedback.
- Ensure approved samples can be consistently reproduced during commercial production.
3. Recipe Management & Product Costing
- Maintain accurate formulations, recipes, processing parameters, costing, and revision records.
- Prepare product costing for new and existing formulations.
- Evaluate ingredient substitutions, supplier changes, raw material price changes, and cost optimisation opportunities.
- Standardise production recipes following successful trials.
4. Production Scale-Up & Troubleshooting
- Conduct pilot and factory-scale trials together with Production and QA.
- Establish suitable processing parameters such as mixing sequence, temperature, time, viscosity, particle size, and filling conditions.
- Troubleshoot formulation and processing issues including oil separation, texture, crystallisation, viscosity, flavour, colour, and stability.
- Support Production in resolving formulation-related issues.
5. Raw Materials & Technical Evaluation
- Evaluate new ingredients and alternative suppliers together with Purchasing and QA.
- Conduct application trials and assess ingredient functionality, compatibility, quality, and cost effectiveness.
- Conduct product benchmarking and recommend improvements where required.
6. Documentation & Compliance
- Maintain accurate R&D documentation including formulations, trial reports, product specifications, costing, manufacturing procedures, and stability records.
- Work with QA to ensure products meet applicable food safety, Halal, regulatory, labelling, and customer requirements.
- Support the Company's applicable food safety management systems and procedures.
Requirements
- Diploma or Degree in Food Science, Food Technology, Food Engineering, Food Chemistry, Nutrition, Biotechnology, or related disciplines.
- Minimum 2–3 years of R&D / Product Development experience in food manufacturing.
- Experience in chocolate, confectionery, spreads, fillings, coatings, sauces, glazes, bakery ingredients, or related products is strongly preferred.
- Good understanding of food ingredients, formulation principles, manufacturing processes, and product costing.
- Able to independently conduct laboratory trials and prepare customer samples.
- Comfortable with formulation, percentage, yield, and raw material costing calculations.
- Strong analytical, troubleshooting, documentation, and project management skills.
- Able to work independently and coordinate with Sales, QA, Production, Purchasing, and Management.
- Proficient in Microsoft Excel, Word, and reporting.
Technical Knowledge – Added Advantage
Experience or knowledge in chocolate formulation, cocoa products, nut pastes, oils and fats, emulsifiers, sweeteners, chocolate rheology/viscosity, particle size control, refining/conching, product stability, factory scale-up, and cost optimisation will be an added advantage.

Pay: RM2,800.00 - RM4,000.00 per month
