-Assist in maintaining HACCP and ISO Certification for F&B Operations and Management through implementation of Food and Safety Management System (FSMS). -Conduct microbiology test in the Food Safety Laboratory for food and environmental samples. Coordinate sending selected samples to external laboratory for chemical/biology laboratory test. -Conduct on-site inspection to whole food production chain for conformance to SOP and compliance to statutory and regulatory requirements set by local and international authorities. -Attend to food poison cases and conduct investigation for immediate rectification. -Coordinate external and internal pest control to operation involved such as kitchen, stewarding, engineering and etc. -Determining the acceptability of the Certificates of Analysis (COA) in the process of monitoring the incoming purchased materials.-Conducting training, coaching and briefing to the F&B and related personnel.-Coordinate and involve in internal and external audit and supplier audit and follow up on corrective action.-Assist in administration support such as relevant report preparation and data compilation or any ad-hoc projects as assigned by the management. Oversees the preparation and update of individual Departmental Operations Manuals.
