Responsible for preparing fresh, consistent and high-quality food through batch, à la minute and line-cooking methods while maintaining strict food-safety standards.

Work aboard an American freestyle cruise line operating global itineraries across Alaska, the Caribbean, Europe, Asia and other international destinations. Ship assignments and itineraries are determined by operational requirements.

• Open to Malaysian and Singaporean applicants only.

• Must be available for full-time shipboard employment.

• At least one year of experience preparing food using roasting, broiling, braising, sautéing, frying and grilling methods is required.

• Experience preparing breakfast items is required.

• At least one year of experience in food production or line cooking is required.

• At least one year of experience in a high-volume hot-production kitchen is required. Equivalent formal culinary training may substitute for this requirement.

• Relevant experience should be from a high-volume professional kitchen, such as a 4-star or 5-star hotel or resort, cruise ship or upscale restaurant.

• Previous shipboard experience is not required.

• At least six months of experience in basic cooking techniques, knife skills and food preparation is required.

• At least six months of experience operating equipment such as steamers, fryers, kettles and Robot Coupe food processors is required.

• Intermediate spoken and written English is required.

• High school diploma or equivalent is required.

• A two-year qualification from a recognised culinary institution is preferred.

• Able to follow standard recipes and calculate ingredient quantities accurately.

• Able to work seven days a week according to the shipboard schedule.

• Comfortable living and working in a multicultural environment and sharing limited accommodation space.

• Must meet the cruise line’s shipboard medical and physical fitness requirements and complete the required safety training.

• Successful candidates may be offered a position one or two ranks below their current land-based role, depending on their experience, interview performance and the cruise line’s assessment.

• Monthly salary: USD 1,050.30

• Contract duration: 36 weeks onboard, followed by approximately 2 months off.

• Prepare fresh, consistent and high-quality food according to approved recipes and instructions.

• Perform batch cooking, à la minute cooking and line-cooking duties.

• Prepare the required mise en place for the assigned station.

• Maintain an organised and efficient production flow based on menus and forecasted demand.

• Check food temperatures and follow the correct chilling, reheating and holding procedures.

• Monitor the freshness, taste, consistency and overall quality of prepared food.

• Report shortages or discrepancies involving ingredients and products to the supervising chef.

• Record and report food waste to supervisors daily.

• Inspect the assigned station for equipment, sanitation or safety concerns.

• Clean and organise the station before and after service.

• Store, label, rotate and dispose of food according to approved procedures.

• Operate basic kitchen equipment safely and correctly.

• Maintain all required public-health, food-safety and sanitation standards.

• Follow all safety, environmental protection and shipboard management procedures.
