Job Description

Responsibilities

Kitchen Operations

  • Manage daily operations of the central kitchen.
  • Ensure food quality, consistency and presentation meet company standards.
  • Supervise food production and event preparation.
  • Plan manpower allocation and kitchen schedules.

Leadership & Team Development

  • Lead, motivate and supervise the kitchen team.
  • Train and coach chefs and kitchen assistants.
  • Build a culture of discipline, teamwork and accountability.

Kitchen Systems

  • Develop and improve Standard Operating Procedures (SOPs).
  • Standardise recipes, preparation methods and production processes.
  • Improve workflow, productivity and operational efficiency.

Inventory & Cost Control

  • Monitor stock levels and minimise wastage.
  • Manage purchasing and inventory with management.
  • Ensure proper stock rotation (FIFO).
  • Assist in controlling food costs and kitchen expenses.

Food Safety & Compliance

  • Ensure compliance with Halal requirements.
  • Maintain high standards of food safety, cleanliness and hygiene.
  • Ensure equipment is properly maintained.

Continuous Improvement

  • Identify opportunities to improve quality, efficiency and customer satisfaction.
  • Support menu development and recipe improvements.
  • Work closely with management to achieve operational goals.

Job Requirements

  • Minimum 8 years of experience in a professional kitchen.
  • At least 3 years in a leadership role (Sous Chef, Head Chef, Executive Sous Chef, Kitchen Manager or Central Kitchen Supervisor).
  • Experience in catering, banquet operations, central kitchens or hotel kitchens is an advantage.
  • Strong leadership and people management skills.
  • Good knowledge of food costing, inventory control and kitchen planning.
  • Experience developing or improving SOPs is an advantage.
  • Able to standardise recipes and maintain consistent food quality.
  • Good understanding of Halal requirements, food safety and hygiene.
  • Passion for coaching and developing kitchen staff.
  • Good communication, planning and problem-solving skills.
  • Basic computer skills; familiarity with AI tools is an added advantage.
  • Able to work independently and under pressure.

Pay: RM5,000.00 - RM6,000.00 per month
