Position Summary
The Chief Baker is the head of the outlet's bakery kitchen and owns the end-to-end running of the kitchen — product, people, inventory, safety, and compliance — while remaining fully hands-on with the team.
Key Responsibilities
Product Quality & Presentation
- Own the quality of semi-finished and finished products, and the visual presentation/appearance of all baked goods leaving the kitchen.
- Conduct spot checks and final sign-off before products are displayed or dispatched.
Inventory Management
- Plan and control ordering quantities and stock holding to avoid both shortages and overstocking.
- Monitor stock rotation (FIFO) and reconcile usage against production output.
Staff Management
- Manage staff working attitude, attendance, and follow-through on assigned responsibilities.
- Observe staff capability and performance on an ongoing basis.
- Prepare the team's working schedule and ensure manning levels are never short-staffed.
- Arrange emergency cover / recovery of manpower when a team member is suddenly unavailable.
Operational Control
- Exercise critical control over products and staff time management.
- Execute the outlet-specific SOP for baking temperature and baking time without deviation.
Cleanliness & Food Safety
- Implement the kitchen cleaning SOP and food safety management practices, aligned with Central Kitchen standards.
Training & Talent Development
- Train, teach, and guide new joiners to ensure they follow the preset SOP.
- Observe and identify talent within the team and help uncover their potential/capabilities.
Communication & Reporting
- Follow up on and respond to all assignments/instructions from management and the outlet manager in a timely manner.
Hands-On Execution
- Work alongside the team on the floor and undertake production duties as needed — this is a fully hands-on role, not a supervisory-only position.
Requirements
- 5–8 years of experience in a related bakery/culinary field.
- At least 3 years of experience in staff management.
- Candidates with a relevant bakery/culinary certification (Bachelor's Degree or Advanced Diploma in Baking, Pastry Arts, or Culinary Arts) will be a strong advantage.
- Positive, solution-oriented mindset; able to lead brief team brainstorms/huddles (e.g. weekly) to keep morale and ideas flowing.
- Basic knowledge of Microsoft Excel and the company's inventory/ordering/stock (RMS) system.
- Able to read and write in English at a working level.
- Certification in food safety management (Halal, HACCP, ISO or similar) and familiarity with their practical application is an advantage.
- Able to personally step in and cover a vacant team position in case of emergency.

Pay: RM4,000.00 - RM5,000.00 per month
