About the Role

We are seeking an experienced and passionate Head Chef to lead our kitchen team in Melaka. Specializing in Western cuisine, you will take full ownership of our culinary direction from complete menu design and recipe development to kitchen setup and daily operations. If you are a strong leader with exceptional culinary skills and hands-on experience structuring a high-performing kitchen.

Job Responsibilities :

• Menu Design & Culinary Direction : Take 100% ownership of menu development, food presentation, seasonal specials, and food costing.
• Kitchen Setup & Equipment Procurement : Select, set-up and organize all kitchen tools, equipment and workstation for optimal workflow and hygiene.
• Team Leadership & Management : Hire, train,schedule, and mentor kitchen staff, establishing a clear workstations for optimal workflow and hygiene.
• Operations & Quality Control : Ensure every dish meets top-tier standards for taste, presentation, and preparation speed.
• Cost & Inventory Management : Oversee inventory, vendor relations, ingredient sourcing and portion control to maximize profitability while minimizing waste.
• Food Safety & Compliance : Maintain strict health, sanitation, and safety protocols in compliance with Malaysia food safety regulations.

Job Requirements :

• At least Diploma or Degree Management, Culinary or equivalent
• Minimum 5 to 10 years experience in culinary experience, with proven track record as Head Chef or Executive Sous Chef specializing in Western Cuisine.
• Hands-on experience layout planning, selecting kitchen equipment, and setting up kitchen operations from scratch or through a re-concepting phase.
• Demonstrate ability to manage, structure, and motivate a culinary team.
• Solid understanding of food cost control, yield management, and inventory management.
• Willing to work at Melaka

Pay: RM9,000.00 - RM10,000.00 per month
