ATLAS is seeking an accomplished Head Sommelier to lead our wine program and Sommelier Team while taking stewardship of our Gin Tower, Whisky Collection and beverage stock controls. This senior Front of House role suits a commercially astute beverage professional who combines deep product knowledge with warm, confident service and hands-on operational leadership.

About Job Position:
Reporting to the General Manager and working alongside the Assistant General Manager and Head Bartender, you will lead the ATLAS wine and Champagne program, Sommelier Team, Gin Tower and Gin Panel, Whisky Collection and beverage inventory controls. You will also contribute as a senior Floor leader, including Manager on Duty responsibility as assigned. This is broader than a traditional Head Sommelier role: alongside excellent service and curation, you will bring commercial discipline to purchasing, pricing, stock integrity and digital collection systems, while developing beverage knowledge across the wider ATLAS team.

Duties and Responsibilities:

• Lead the ATLAS wine and Champagne program across menus, service formats and events, maintaining quality, balance, accurate listings and commercial relevance.
• Lead, coach and develop the Sommelier Team, including Junior Sommeliers; identify talent within the Floor Department and create clear pathways for progression.
• Act as a senior ambassador and, when rostered as Manager on Duty, lead Floor service, guest recovery, team deployment and inter-departmental coordination.
• Hold stewardship of the Gin Tower and Whisky Collection and lead the ATLAS Gin Panel, from tastings and note collation through to listing decisions, supplier feedback and team education.
• Maintain the digitised Gin Collection in Airtable as an accurate, searchable, service-ready resource, reconciling digital listings with physical stock and current availability.
• Manage supplier relationships and assigned procurement, including international gin purchases; coordinate shipping, customs and duties with Operations and maintain landed-cost and pricing discipline.
• Own the month-end beverage stocktake cycle, coordinating counts, reconciling results against Revel, leading variance investigations, recording stock transfers and reporting accurately to Finance and Management.
• Lead venue-wide beverage education with the Head Bartender so Bar and Floor teams present one coherent and confident ATLAS beverage program.

Job Requirements:

• Strong professional sommelier experience in a high-end restaurant, hotel or comparable luxury hospitality environment, with proven leadership or supervisory responsibility.
• Deep wine and Champagne knowledge combined with confident, approachable guest-facing service and the commercial awareness to translate expertise into appropriate recommendations and sales.
• Strong spirits knowledge, particularly gin and whisky, together with the ability to lead, coach and develop Sommeliers and wider Floor team members.
• Strong commercial and numerical capability across purchasing, costings, stocktake, COG management, POS reconciliation and variance analysis; confidence with digital tools such as Airtable is important.
• Highly organised and detail-focused, able to balance visible Floor leadership with the accuracy, administration and follow-through required to protect a complex beverage program.
