Position: Butcher / Commis (Butcher)

Department: Kitchen / Culinary Department

Job Purpose: Responsible for preparing, cutting, portioning, and storing all meat, poultry, and seafood according to hotel standards, recipes, and food safety regulations, ensuring efficient kitchen operations and minimal waste.

Key Responsibilities:

• Meat Preparation & Portioning: Cut, trim, bone, and portion various types of meat (beef, lamb, poultry, fish, etc.) to exact specifications and standardized recipe requirements.
• Inventory & Stock Management: Receive raw meat deliveries, inspect quality and freshness, and ensure proper stock rotation (FIFO - First In, First Out).
• Storage & Hygiene: Store raw ingredients in designated chillers and freezers at correct temperatures to maintain quality, safety, and shelf life.
• Kitchen Maintenance: Maintain high standards of cleanliness, sanitation, and hygiene in the butcher section, work surfaces, and equipment in compliance with HACCP and local health regulations.
• Collaboration: Coordinate with the Executive Chef, Sous Chefs, and kitchen staff to support daily operational needs, banquets, and special event requirements.

Requirements:

• Proven experience as a Butcher or in a similar culinary/kitchen role within a hotel or hospitality setting.
• Strong knowledge of meat cutting techniques, knife handling, yield management, and food safety standards (HACCP).
• Strong attention to detail, physical stamina, and ability to work in a fast-paced environment.
• Relevant culinary certification or equivalent practical kitchen experience.

Pay: RM2,500.00 - RM3,500.00 per month
