Ready to take your culinary career to the next level? At Hard Rock Hotel Desaru Coast, we're looking for a passionate and dedicated Chef de Partie who thrives in a fast-paced kitchen and takes pride in delivering exceptional food experiences.


Role Description

This is a full-time, on-site Chef de Partie role at Hard Rock Hotel Desaru Coast. As an important member of the Culinary team, you will be responsible for managing a designated section of the kitchen, ensuring the highest standards of food preparation, quality, and presentation are consistently achieved.


Working closely with the Sous Chef and Executive Sous Chef, you will contribute to the smooth operation of the kitchen while supporting junior team members and maintaining Hard Rock's commitment to culinary excellence and memorable guest experiences.


Key Responsibilities

  • Manage and oversee the daily operations of an assigned kitchen section.
  • Prepare, cook, and present dishes according to established recipes and quality standards.
  • Ensure consistency in food quality, portioning, and presentation.
  • Maintain high standards of food hygiene, sanitation, and safety in accordance with HACCP requirements.
  • Assist in monitoring stock levels, requisitions, and inventory control.
  • Minimize food waste and support cost control initiatives.
  • Train, guide, and support Commis Chefs and kitchen assistants within the section.
  • Ensure all mise en place is prepared and available for service periods.
  • Work closely with the culinary leadership team to maintain efficient kitchen operations.
  • Support menu development and contribute ideas for new dishes and promotions.
  • Ensure equipment and workstations are maintained in a clean and organized condition.


Qualifications / Skills / Competencies

  • Certificate, Diploma, or Degree in Culinary Arts or related discipline.
  • Strong knowledge of culinary techniques, food preparation, and kitchen operations.
  • Good understanding of food safety and hygiene standards.
  • Ability to work effectively in a fast-paced environment.
  • Strong organizational and time management skills.
  • Positive attitude with a willingness to learn and grow.
  • Team player with good communication and interpersonal skills.
  • Passion for culinary excellence and guest satisfaction.


Industry Experience

  • Minimum 3–5 years of culinary experience in hotels, resorts, restaurants, or similar hospitality environments.
  • Previous experience as a Demi Chef or Chef de Partie preferred.
  • Experience in high-volume operations or multiple dining concepts is an advantage.
  • Familiarity with kitchen SOPs, food costing, and inventory management.
  • Experience in luxury hospitality environments is preferred.
